Join us for the next installment of our Apericena Wine Class series as we welcome special guest Kevin Day, editor-in-chief of Opening a Bottle, for an immersive evening exploring the wines of Mt. Etna.
Etna continues to captivate—not just as a majestic, active volcano but also as one of the most exciting wine regions in the world. From vibrant sparkling wines to crisp, high-acid Carricante whites and refined, structured Nerello Mascalese-driven reds, the wines have never been better.
Kevin Day is a great friend of Restaurant Olivia and a leading voice in the wine world—a journalist, photographer, and educator based here in Denver. His site, Opening a Bottle, is one of the top wine publications and an invaluable educational resource for our team. An unofficial Etna ambassador, Kevin has spent weeks in the region, interviewing producers and capturing its striking landscapes.
For this special evening, our Wine Director, Scott Thomas, and Kevin Day will guide us through a 8-wine lineup, sharing personal stories and breathtaking photography, while Chef Ty prepares a light, two-pasta dinner, complemented by charcuterie and dessert, all served around our community table.

Scott joined Restaurant Olivia as wine director in April 2023, bringing decades of experience in wine and hospitality. He is also the founder of Grappolo Wine School, which he established in 2022. Scott is highly passionate about educating others and aims to share his love for wine and food cultures with passionate enthusiasts and industry professionals.
He holds certifications as a Certified Wine Educator and Certified Sommelier and recently received a Master's degree in Wine Culture from the University of Gastronomic Sciences after spending two immersive years in the Barolo region of northern Italy. Scott has also earned the esteemed titles of Italian Wine Ambassador, certified Italian Wine Educator, and official Orvieto Ambassador.
